Sandwiches - 'Tofuna' Sandwiches

8 oz packaged baked marinated tofu
13 cup tofu mayonnaise, up to 1/2
1 lrg celery stalk, finely chopped
1 x scallion finely chopped, (optional)
(white and light green part)
4 x regular or 6 mini-size pita breads, warmed
and cut crosswise in half
MAKES 4 TO 6 DAIRY-FREE
This is a great family lunch favorite in my home-even tofu skeptics love it. Since it is rather crumbly, its ideal to stuff into pita pockets.
In medium bowl, crumble tofu. Add mayonnaise , celery and scallion if using and stir until well combined.
Stuff mixture into warmed pita bread halves and serve.
