| 3 lb fresh whole Flounder, dressed | | Salt | | Pepper | | 14 cup (1/2 stick) butter, melted | | 2 tbl butter | | 1/3 cup green pepper strips | | 1/4 cup finely chopped onion | | 1 1/2 cup diced tomatoes | | 1/4 cup sliced stuffed green olives | | 1 tsp sugar | | 1/4 tsp salt | | 1 dsh pepper |
| | Preheat oven to 350 F. Sprinkle Flounder inside and out with salt and pepper . Arrange fish skin side down in baking dish; pour 1/4 cup melted butter over fish. Bake 25 minutes. | | In skillet , melt 2 tablespoons butter; add green pepper and onion and saute until onion is slightly brown. Add tomatoes , olives , sugar, salt and pepper. | | Pour sauce over fish and bake 10 minutes longer. |
