Cajun and Creole - Baked Flounder Creole

3 lb fresh whole Flounder, dressed
Salt
Pepper
14 cup (1/2 stick) butter, melted
2 tbl butter
1/3 cup green pepper strips
1/4 cup finely chopped onion
1 1/2 cup diced tomatoes
1/4 cup sliced stuffed green olives
1 tsp sugar
1/4 tsp salt
1 dsh pepper
Preheat oven to 350 F. Sprinkle Flounder inside and out with salt and pepper . Arrange fish skin side down in baking dish; pour 1/4 cup melted butter over fish. Bake 25 minutes.
In skillet , melt 2 tablespoons butter; add green pepper and onion and saute until onion is slightly brown. Add tomatoes , olives , sugar, salt and pepper.
Pour sauce over fish and bake 10 minutes longer.
