| 1 lb bacon diced | | 1 cup chopped yellow onions | | 14 cup tomato paste | | 1 cup apple cider vinegar | | 1 tbl soy sauce | | 1 tbl Worcestershire sauce | | 1 tbl hot sauce | | 1 cup brown sugar | | 2 tsp salt | | 1/2 tsp red pepper flakes |
| | Place the bacon in a medium pot and cook until golden brown and the fat is rendered, about 5 minutes. Remove the bacon and drain on paper towels. Remove all but 1/4 cup of bacon fat from the pan. Add the onions and cook, stirring, until the onions are soft, 4 minutes. Add the tomato paste and stir to incorporate. Add the vinegar , soy sauce , Worcestershire , and hot sauce. Stir well and bring to a boil. Add the sugar, salt , red pepper , and cooked bacon, and cook at a boil until the sugar is dissolved, about 3 minutes. Reduce the heat to medium-low and simmer until thickened, 7 to 8 minutes. Remove from the heat. | | With a hand-held immersion blender or in a food processor, lightly pulse to finely chop the bacon.
