| 4 x , 6 ounce Ahi, steaks | | 1 tbl Peppercorns, white, cracked | | 1 tbl Sesame seeds | | 1 tsp Kosher (coarse) salt | | 13 cup Lime juice | | 3 tbl Soy sauce, dark | | 1 tbl Fish sauce | | 2 tsp Sugar | | 1 tsp Jalapeno peppers, diced |
| | For the rub......in a small saucepan combine the peppercorns , salt and sesame seeds . | | Roast this mixture until the seeds are lightly toasted, about 5 minutes. | | For the sauce ....whisk together all remaining ingredients. | | Lightly oil both sides of the Ahi and sprinkle on the rub. Press lightly into flesh. | | Grill over high, direct heat. Sear each side about 1-2 minutes. | | Serve with individual portions of the sauce. |
