Sauces - Ahi with Thai Dipping Sauce

4 x , 6 ounce Ahi, steaks
1 tbl Peppercorns, white, cracked
1 tbl Sesame seeds
1 tsp Kosher (coarse) salt
13 cup Lime juice
3 tbl Soy sauce, dark
1 tbl Fish sauce
2 tsp Sugar
1 tsp Jalapeno peppers, diced
For the rub......in a small saucepan combine the peppercorns , salt and sesame seeds .
Roast this mixture until the seeds are lightly toasted, about 5 minutes.
For the sauce ....whisk together all remaining ingredients.
Lightly oil both sides of the Ahi and sprinkle on the rub. Press lightly into flesh.
Grill over high, direct heat. Sear each side about 1-2 minutes.
Serve with individual portions of the sauce.
