Seasonings - A Classic Vinaigrette

2 x shallot, very, finely, diced
4 oz red wine vinegar
2 tsp Dijon mustard
1 tsp honey or 1 tsp sugar
7 oz grape seed oil
1 oz white wine or 1 oz water
salt
pepper
In a small bowl, add the Dijon mustard and the honey or sugar to the red wine vinegar , stirring to combine. Stir in the shallots , the grapeseed oil and salt and pepper to taste. Do not whisk the mixture, just give it a stir. Add the white wine or the water to taste. The dressing may not require all of it.
Yield: 500 millilitres or 16 fluid ounces
