| 2 x shallot, very, finely, diced | | 4 oz red wine vinegar | | 2 tsp Dijon mustard | | 1 tsp honey or 1 tsp sugar | | 7 oz grape seed oil | | 1 oz white wine or 1 oz water | | salt | | pepper |
| | In a small bowl, add the Dijon mustard and the honey or sugar to the red wine vinegar , stirring to combine. Stir in the shallots , the grapeseed oil and salt and pepper to taste. Do not whisk the mixture, just give it a stir. Add the white wine or the water to taste. The dressing may not require all of it. | | Yield: 500 millilitres or 16 fluid ounces |
