Sauces - Aged Sherry Vinegar Sauce

3 x Shallots, finely minced
1 tbl Olive oil
2 cup Chicken stock
1 cup Sherry vinegar
12 cup Aged sherry vinegar
2 tbl Butter
1 tbl Honey
Salt and freshly ground pepper to taste
In a saucepan caramelize shallots in olive oil. Add chicken stock and sherry vinegar . Reduce by 1/2. Add aged sherry vinegar and reduce to a sauce consistency. Add butter , honey and season to taste with salt and pepper .
