| 3 x Shallots, finely minced | | 1 tbl Olive oil | | 2 cup Chicken stock | | 1 cup Sherry vinegar | | 12 cup Aged sherry vinegar | | 2 tbl Butter | | 1 tbl Honey | | Salt and freshly ground pepper to taste |
| | In a saucepan caramelize shallots in olive oil. Add chicken stock and sherry vinegar . Reduce by 1/2. Add aged sherry vinegar and reduce to a sauce consistency. Add butter , honey and season to taste with salt and pepper . |
