Pickles - Apple Chutney

1 kg apples, Granny Smith
300 gm onions, medium
300 gm tomatoes
200 gm raisins
200 gm currants
40 gm ginger, glace
2 tsp mustard seeds
2 cup vinegar, malt
23 cup brown sugar
1/4 tsp cayenne pepper
1 tsp salt
Peel, core and slice apples .
Chop the onions , tomatoes and raisins .
Place in a saucepan and add remaining ingredients.
Allow mixture to heat slowly, simmer gently for 1-2 hours or until chutney is a rich brown colour. Stir regularly.
Pour into small sterilised jars and cover to make airtight.
Keeps for 3-4 months.
Ensure storage jars are well sterilised.
