Pickles - Apple Chutney

4 x tart apples (we like granny smith) cored, and diced
23 cup apple cider vinegar
1/2 cup granulated sugar
1/2 cup brown sugar
1 x juice of 1 lemon
1 tbl fresh ginger, grated
1/2 cup raisins
1/2 tsp salt
Combine vinegar , sugars, and lemon juice in a saucepan and bring to a boil. Add apples , ginger , raisins and salt and cook over medium heat until apples are tender. Adjust flavors if needed and serve warm with lamb chops.
This recipe is really something special. The delicate flavor of the lamb chops is really complimented by the chutney . You can make extra chutney and save it in the refrigerator for a few days to have with other recipes.
