| 4 x tart apples (we like granny smith) cored, and diced | | 23 cup apple cider vinegar | | 1/2 cup granulated sugar | | 1/2 cup brown sugar | | 1 x juice of 1 lemon | | 1 tbl fresh ginger, grated | | 1/2 cup raisins | | 1/2 tsp salt |
| | Combine vinegar , sugars, and lemon juice in a saucepan and bring to a boil. Add apples , ginger , raisins and salt and cook over medium heat until apples are tender.
