| 4 x Granny Smith apples | | 2 x Chipotle or Jalapeno chilies | | 3 x Lemons, juiced | | 2 x Lemons, zest of | | 1 cup Water | | 1 cup Sugar | | 1 x Leek, white part only | | 1 tbl Fresh mint, finely chopped |
| | Cut apples into quarter-inch cubes and finely chop chipotle chiles. In bowl, mix apples, chilies, lemon juice, lemon zest , water and sugar. | | Marinate for 1 hour. Strain liquid and set aside apple mixture. In a small saucepan, simmer strained liquid for 20 minutes over medium high heat. | | Slice leeks and add to saucepan and simmer for another 10 minutes. Add apple mixture and simmer 20 minutes until a syrup forms and apples are tender. Remove from heat, add fresh mint and allow to cool. | | Serves 8. 190 |
