| 16 x Thin slices raw salmon | | 2 x Shallots, finely chopped | | 1 x Leek, finely chopped into 3mm pieces | | 2 tbl Absolut Vodka | | 1 x Ripe blood orange, juice of | | 1 tsp Sea salt | | Freshly milled black pepper | | Few sprigs mizuno leaves or rocket | | 1 x Lime to finish, juice of |
| | Lay out the thin slices of salmon on plates, 4 per plate. Sprinkle each plate evenly with the shallot and leek . | | Mix together the vodka and orange juice, divide into 4 equal portions and trickle 1 portion on to each plate to cover the salmon. | | Just before serving, sprinkle lightly with sea salt and freshly ground black pepper and the lime juice. Garnish with mizuno leaves or rocket and serve immediately. |
